Tips for a great homemade cheesecake like Frankie Burgers
Here are some tricks to make a perfect cheesecake:
- Use quality cheese: At Frankie Burgers we use fresh, high quality ingredients in all our burgers, and the cheesecake is no exception. The cheese used is carefully selected to ensure exceptional flavor, while additional ingredients are used in just the right amounts to enhance the flavors without overwhelming them. We opted for mascarpone cheese, a classic Italian cheese, with a creamy and smooth texture that makes it ideal for making desserts. In addition, we added Philadelphia cheese, a cream cheese with a very unctuous texture with which we can achieve the desired structure, without lumps and is a cheese with a mild flavor. Use both cheeses in the preparation at room temperature, so that it is easier to mix them with the rest of the ingredients.
- Make sure the ingredients are at room temperature to achieve a homogeneous mixture and avoid lumps.
- Do not overmix: When combining ingredients, mix just enough to obtain a uniform mixture.
- Bake the cheesecake at a low temperature and for a long time. This will help obtain a creamy texture and prevent cracking. And avoid opening the oven during baking.
- Allow to cool gradually to obtain the best texture and flavor.
Cheesecake preparation
Let's get to work!
- Before starting the preparation of the base and the filling, preheat the oven at 210ºC.
- Use a mold with high walls and a removable base lined with slightly moistened greaseproof paper.
- For the cheesecake baseIn the microwave, crush the crackers (you can use Maria style); melt the butter in the microwave and mix with the crushed crackers. This adds a touch of crunch and a contrast of flavors that further elevates the dining experience.
- Spread the mixture over the mold until you get a firm and uniform base. Reserve in the refrigerator.
- For the backfillMix the mascarpone cheese, Philadelphia cream cheese, sugar and eggs in a bowl, stirring until homogeneous. Finally, add the cream and mix.
- Fill the mold and place the cheesecake in the oven at 180ºC.with heat up and down, during 40-50 minutes. Before serving, allow the cake to cool for 4 to 5 hours.
